Before taking over the crumpet world, dessert queen Merna Taouk brought delicious handmade desserts to the Sydney food scene. We caught up with Merna to get the lowdown on her crumpets.


WE KNOW YOU BEGAN WITH DESSERTS, BUT WHAT MADE YOU START MAKING CRUMPETS?

I love crumpets! I grew up eating crumpets but unfortunately, there was no gourmet crumpet on the market. So I made it my mission to make the perfect crumpet.


WHAT MAKES YOUR CRUMPETS SO UNIQUE AND DELICIOUS?

They are fermented, made with Pepe Saya buttermilk & wholemeal flour to make them deliciously good. The true secret is understanding what each ingredient is doing and what its role is to get the perfect crumpets.


HOW ARE THE CRUMPETS MADE?

With lots of love! There are many elements to making crumpets – they are made in small batches and fermented for hours. Then cooked on a hot plate in rings on a really low temperature to allow the holes to pop.


WHAT’S YOUR FAVOURITE WAY TO EAT CRUMPETS?

With loads of Pepe Saya butter and Carriageworks honey – simple but great!


WHAT’S THE ULTIMATE SAVOURY CRUMPET FOR YOU?

Crumpets with cheese, especially thinly sliced Pyengana Cheddar Cheese, are delicious! The ultimate is a Crumpet burger, I use crumpets instead of burger buns!


WE KNOW YOU’RE A DESSERT QUEEN, BUT HOW DO YOU LIKE YOUR MEAT? DO YOU COOK MUCH AT HOME?

I love my meat well seasoned, charred a little on the outside and cooked medium rare. I cook a lot at home and love a good piece of Rib eye or Porterhouse cooked on the BBQ.
